What's nice about this site is she lists the boundary conditions (too hard, too crumbly, etc) and so you can make adjustments for the way you like your cookies to end up.

Good luck. I'm betting you have much better chocolate options than Hersheys. I acually prefer chipping off pieces from a large 54% 5 kg block and mixing them with 70% chips.
