ISO: EvaN!!!! Question about aborio rice in your spinach risotto recipe... or anyone else??

The side of my aborio rice container says 1 cup rice per 3 cups liquid. The spinach risotto recipe says 3 cups liquid to 1-1/2 lbs. (325 grams) rice... that works out to about 1-3/4 cups rice. Is that right?? Sounds like it would be a much drier dish than most risottos. HELP!! Want to make this for dinner tonight!http://eat.at/swap/forum/index.php?action=display&forumid=1&msgid=108315

I think the 1 1/2 lbs = 325 grams might be way off. I'll go check my W-S risotto book which has gram

Do you think she meant 1 1/2 cups rice? My book has 1.5 cups=10.5 oz=330 grams listed for a recipe.

I made it with 1-1/2 cups rice but it was too much... needed much more liquid

than called for and I think it still turned out too dry. Good flavor though!

But that's easy to adjust isn't it? Just have extra stock warm and add til it's as loose as you want

Yeah, that's what I did, but it really made a ton of food for just two people smileys/smile.gif
