I made this but didn't add the rice to the soup. I made it in a rice cooker and placed it on the bottom of the bowl, then ladled the soup on top. Since I was holding it, I didn't want the rice to suck up all the broth. It is really good and does taste like stuffed peppers.
Stuffed Pepper Soup
2 lbs beef, ground
28 oz tomato sauce
28 oz diced tomatoes, undrained
2 cup long grain white rice, cooked
2 cup green bell pepper, chopped
1 Tbsp red wine (or any other type) vinegar
2 each beef bouillon cube
1/4 cup brown sugar, packed
2 teaspoon salt
1 teaspoon pepper
Brown beef, drain, and add remaining ingredients. Bring to a boil, then reduce heat and cover, allowing to simmer for 45-50 minutes.
