excellent source for how much salt to use: Salt Fat Acid Heat

Thank you for this chart! I was just wondering a few days ago how much the amount of fine sea salt differs from regular table salt. Wow, it's A LOT more than I figured.
 
I can use the conversion table for different types, but a quick glance at the "how much to use" chart would have us declaring all of my food way too salty!
I cut back on salt use years ago and now we are both very sensitive to it in food. About the only place I add what she suggests is in pasta water.
