RECIPE: EXCELLENT white frosting recipe: Mascarpone Whipped Cream Frosting

I needed a whipped cream frosting that could be used to decorate the roller coaster cake I was asked to make. It needed to be sturdy, and stabilized, but I don't like adding gelatin or cream of tartar.

This worked like a dream! Not too sweet, and comes together in minutes. Aside from scraping down the sides of the bowl, it pretty much makes itself.

Trader Joe's has an 8 oz tub of excellent mascarpone, along with pint bottles of heavy cream, so measuring was minimized.

It pipes well and holds it's shape beautifully, even at room temperature.

Here's the basic recipe:

Mascarpone Whipped Cream Frosting

Ingredients:

8 oz. mascarpone cheese

1/4 cup granulated sugar

1/2 teaspoon vanilla extract

2 cups heavy whipping cream

Instructions:

In the bowl of a standing mixer fitted with a whisk attachment, mix the mascarpone, sugar, and vanilla on high until completely blended.

Add whipping cream and mix on low until cream is mostly incorporated into the cheese/sugar mixture. Scrape bowl. Then whip on high until stiff peaks form.

Transfer to a piping bag fitted with your favorite cupcake frosting tip.
