This includes Jiffy Corn Bread too.....

A student at HBHS had pancakes this week and it almost became fatal. His Mom (registered nurse) made him pancakes, dropped him off at school and headed to play tennis. She never takes her cell phone on the court but did this time and her son called to say he was having trouble breathing. She told him to go to the nurse immediately and proceeded to call school and alert the nurse. The nurse called the paramedics and they were there in 3 minutes and worked on the boy all the way to the hospital. He came so close to dying. Evidently this is more common then I ever knew. Check the expiration dates on packages like pancakes and cake mixes that have yeast which over time develop spores. Apparently, the mold that forms in old mixes can be toxic! Throw away ALL OUTDATED pancake mix, Bisquick, brownie mixes etc you have in your home.

You can check this website....... http://www.snopes.com/medical/toxins/pancake.asp

P. S. You might want to tell this to your children, grandchildren, nephews, nieces and anyone else who keeps these types of mixes in the cupboard.

Jiffy mix and pancake mix don't have yeast, so I think it's mold in general, not just yeast that

would be of concern in these quick bread mixes. Scary. Another good reason for me to take inventory of my pantry----long overdue.

I keep my pancake mixes in the extra refer. They keep for months and I have never had a problem.

I take out the inner bag and after taking out what I want, I seal in with the Food Saver machine. I seal all my crackers, potato chips, etc. It works like a charm.

You're gonna love this. We were at my fil's house last week in San Diego (Dawn: KIPS CLOSED!!!)...

...and we noticed a bunch of little tiny moths cruising through the house.

A day or so later, we found a small backpack that my fil used when he went to Padre games. It was still filled from last season, and included a substantial quantity of pistachio nuts.

My WW picked up the back pack and a slew of moths flew out of the backpack into the air!!!!

Nuts!

Oh man, that was one of my favorite chicken dishes. I have access to a friend of the chef,

I will have to beg him to find out what the recipe was. The restaurant wasn't great, but that one dish was. They had been in business for a long time. So sad to see businesses going out of business in this economy. They tried to open up another restaurant by us, on Lake Murray Blvd, but they couldn't support it. We would order their sushi to go along with their garlic chile chicken, and the chicken was to die for. I am so sad. Now I have to look for carne asada burritos and garlic chile chicken. And to be honest, Michael, I would choose the garlic chile chicken over the carne asada! Sigh.

Please make sure you read the Snopes article. . .

This stuff can be toxic, but it needs to have set open to air for a while. Sealed items would be fine. And I betcha if someone were sensitive to molds they would be more at risk eating old, open-package pancake mix in a more humid part of the country.

From the Snopes article

"For mold to gain access to a food product, the food stuff has to be exposed to its spores. Pancake mix cocooned in an unbleached wax paper, plastic,or a foil pouch within its outer packaging wouldn't have this contact and should still be safe no matter how old it gets. However, mix sold un-pouched in cardboard boxes or paper sacks would likely be at risk even if the box or sack hadn't previously been opened, because such packaging would not necessarily keep dampness out, and mold thrives in damp environments.

"What does all this mean? If you don't have a mold allergy, you needn't fear your pancake mix; if you do have such a sensitivity, you shouldn't keep your flapjack makings around for a few years after opening the box or pouch in came in. It's not worth dieing over 50 cents worth of pancake mix, so when in doubt, throw it out."

I did get a dose of the garlic chile chicken last fall. It must've been right before...

...they closed.

It was very VERY good!

If you are successful in getting even a hint of what that entailed... I expect full disclosure!
