Mac and cheese, mac and cheese!

bringing me to my knees,

Someone Please make mac and cheese,

THIS Velveeta Mac and Cheese.

Fat day recipe, starring my guilty pleasure/secret vice, Velveeta Cheese (Stuff)! And I have to sing the little song above. . .

Grandma Goodwin’s Mac and Cheese Recipe

Ingredients:

16 oz. dry weight – elbow macaroni

2 tsp All Purpose Flour

1 1/4 cups whole or 2% milk

8 tbsp (1 stick) butter

2 cups (1/2 ‘loaf’) of Velveeta ‘cheese’

1 sleeve of Ritz Crackers

Instructions:

Preheat oven to 350

Butter a 2 qt baking dish/cake pan (9 x 12)

Cook elbow macaroni and drain

In a saucepan, mix 2 tsp of flour with 1/2 cup of milk until smooth

Gradually add 1 cup of milk, stirring until smooth

Cut up 2 cups of Velveeta in ½ inch cubes (this is ½ a loaf of Velveeta)

Over low heat, add ‘cheese’ to milk/flour mixture until ‘cheese’ melts

Combine with macaroni in the baking dish mixing well

Cut 2 tbsp of butter in pieces and push down into macaroni mixture

Melt 6 tbsp of butter and mix with 1c of Ritz cracker crumbs

Sprinkle buttered cracker crumbs evenly over top of macaroni mixture

Bake in oven for 30 mins. until bubbly and lightly browned.

 
This is very similar in ingredients to how my mother made mac and cheese. She layered the

cooked macaroni with slices of Velveeta, salt pepper and dots of butter then poured milk/cream over the entire thing. I don't remember her using any flour. There was cheese on top, she baked it until it was brown. The end result was creamy, cheesy and delicious. The Velveeta was from a loaf, she sliced or cubed it.
