FABULOUS salmon with bacon and mustard this weekend!! (more)

I've made this several times and it's always a hit. The salmon is so moist and flavorful. The first time I broiled it and it was wonderful. This weekend I grilled it over direct coals, but using an enameled fish rack - the kind with the little holes all over it. My salmon fillets were quite narrow but long, and I didn't want anything happening to them. I found that pre-heating the rack over the coals and then adding the salmon with bacon side down really browned the bacon nicely. This is such an easy recipe. The accompanying spinach is wonderful and all goes well with mashed potatoes. Forgive me if I submitted this recipe in the past. Cannot remember. I hope you give it a try.
