Fall Pickles

the talk about Point Reyes cheese a few weeks back which I veered off into their pickles inspired me to do some pickling. Doing a new batch tonight or tomorrow but I wanted to show off my fancy label even if I can't pass on some samples. These do have some serious kick to them. More than I was anticipating but I like hot stuff so right up my alley. Proven to be too hot for some though...

This batch included pickling cucumbers, cauliflower and jalepenos primarily though I did throw in some onions and some Thai peppers that I had grown a few years back and dried. They really heated things up!

The jalepenos on the other hand made an awesome relish which I shared with my wife today with hot dogs. For some reason the jalepeno relish is less hot than the cauliflower and pickles. Go figure.

second batch in play

got the second batch off the ground yesterday. These are larger picklers than the last batch. I intended to do traditional dill / sour pickle but I couldn't help myself and ended up adding both some jalepenos and some red pepper flakes to boot... This time I also went with full (seeds and all) jalepenos so they should be hotter. But sans the Thai peppers I expect this batch to still be quite a bit milder overall. No cauliflower this time either but I did add quite a bit of sweet onions and a few stalks of celery and just a smidgen of sliced carrots.
I couldn't fit everything in my crock so made a small batch of refrigerator pickles too. We'll see how those work out.
I'm using a 10 litre crock so each batch is not huge but I do have enough to share and I'd be open to a swap with other members if anyone is interested.
I'm also toying with the idea of trying a wine barrel to make a huge batch... I know that my favorite whisky uses used sherry casks with great results, to age their whisky (The McAallan) so I'm wondering what using barrels from local wineries might do to flavoring pickles...

better photo

still not the greatest photo but a little more detail:

Pickle and the spear for the smaller jars. Relish, Cauliflower, (the infamous, evil) Thai pepper, and the awesomest potato salad ever, made with a mixture of these pickled ingredients (no cauliflower) some mayo, a little egg and Dusseldorf mustard.
