Farmer loaded me up with daikon & kolrabi - what can I do with them?

I mean he loaded me up! I purchased one bunch (3) daikon - I only wanted one but.... And one bunch (4) small kolrabi. Total of $5. It was closing time & his broken English he evidently didn't think I was getting my $5 worth and doubled it. What about the greens - I use radish greens. Think I can use the daikon greens, the kolrabi didn't have manu greens attached I don't think.

 
Kohlrabi is great in the summer--just peel, slice into sticks, and eat.

It's good for dips, too. It tastes sort of like peeled broccoli stems.

I always think it'd be good cubed and added to a chicken salad or Waldorf salad.

 
Here is a recipe for Radish Jelly. I haven't made it

and I don't know where I got it, but it sounds kind of interesting.

Radish Jelly

Amount Measure Ingredient -- Preparation Method

2 cups finely chopped radishes
2 1/2 cups granulated sugar
3/4 cup water
1 box pectin -- (1 3/4 oz)
2 tsp. prepared horseradish

Combine first 3 ingredients over medium-high heat. Stir constantly until sugar dissolves. Bring to a rolling boil.
Add pectin. Stir until dissolved. Bring to a rolling boil again and boil for 1 minute longer. Remove from heat
and skim off foam. Stir in horseradish. Process in hot water bath (didn't say for how long). Serve with cream
cheese and crackers or meat. Makes about 2 pints.

GRANDMOTHER'S RADISH LEAF SOUP

Amount Measure Ingredient -- Preparation Method

3 large bunche radishes
1 tablespoon butter
1 large onion -- chopped
4 russet potatoes (about 1 1/2 pounds) -- peeled, chopped
3 cups water
2/3 cup milk

Cut leaves from radishes and wash well. (Reserve radishes for another use.) Melt butter in heavy large saucepan over medium heat. Add onion and sauté until tender, about 5 minutes. Add radish leaves and sauté until wilted, about 2 minutes. Add potatoes and 3 cups water. Cover and simmer until vegetables are tender, about 20 minutes.
Puree soup in batches in blender. Return to saucepan. Mix in milk. Stir over medium heat until hot. Season soup with salt and pepper.
Serves 6.

Steam it and serve with butter. Not the most interesting veg but some here eat it all the time.

 
Cucumber and Daikon Salad (Sunomono). T&T . I tend to love this sort of salad and do enjoy daikon.

Cucumber and Daikon Salad (Sunomono)

This type of vinegary salad is called sunomono in Japan. Since it has a refreshing taste, it goes with many types of dishes.

1 small DAIKON RADISH
1 small CUCUMBER
5 Tbsp RICE VINEGAR
2 Tbsp SUGAR
1 tsp SALT

Peel daikon radish and slice it into thin slices. Slice the cucumber to the same thickness. Salt the cucumber and daikon slices and wait about 5-10 mins. Wash off the daikon and cucumber slices and drain the water through a strainer.

Chill thoroughly.

Mix the vinegar and sugar in a cup. Pour the vinegar mixture over the cucumber and daikon slices. Set aside at least 15 min. before serving.

 
My In-Laws use Kohrabi in a few Hungarian dishes. They love it in the clear soup

I think it adds a sweetness. They have used it in a ham casserole. (I will see if I can track down the recipe) It is similar to diced potatoe and ham only with kolrabi and Lastly, as suggested by Erin, slice into sticks and serve with dip, etc. (Only if it is young) The older one's are tough and taste better cooked.

Ooh - thanks for all the ideas. I put it in this Chinese chicken salad but was stumped after that.

Radish jelly? Might have to get more so I can try that. I love the idea of pickled. And Hungarian? Wow now I can't wait to get hubby off to work tomorrow so I can play. Taking two days off - cousin and her daughter coming in tomorrow afternoon for a couple of nights.

 
pickled kolrabi

I sliced it thin and refrigerator pickled it and it was excellent.
