Can we have a posting of your tried and true faves? Here is what I did today. It was heaven!

I picked up mini Naan Bread Rounds for the toaster. They are soft and delicious. I put a good tubed tomato paste on the bottom and spread it to the edges, piled on six fresh mozzarella pearls, small whole,cherry toms all colors, fresh garlic slivers, then sprinkle with a bit of your favorite dried pizza herbs and Aleppo Pepper. Preheat a small sheet pan, lined with foil, to 475°. After heated, spray with a little olive oil spray. Place pizza on top, cook until mozz melts and bread is crispy. Top with fresh basil, and a sprinkle of fresh baby arugula dressed with fresh lemon juice and evoo. Heaven!

 
I bought some whole wheat english muffins and have been making Almond Butter&Jam . . .

sandwiches. The muffing are really too sweet for me to enjoy toasted with an egg on top, but for these sandwiches they are great.

And I just tried Cashew butter for the first time. That stuff is great, and no wonder cashews are used to make mock "cream"!.

 
I love to toast those whole wheat sandwich thins, then spread with hummus, top

with veggies like thinly sliced cucumbers, avocado, tomatoes, and fresh herbs. If you have any bits of leftover protein such as chicken or fish you can add bit of that on top for an open faced sandwich/pizza type dish.
