Feb issue of Eating Well is out. I picked up a copy this morning on my way to work.

I want to make every recipe in the magazine! There is a whole section about mangoes featuring Indian Mango Dal, Mango Pudding, Thai chicken + Mango Stir Fry; there is a chocolate section with quickie chocolate treats featuring chocolate covered brownie bites, quick mini chocolate cheesecakes, thick + rich drinking chocolate, peanut butter + pretzel truffles, chocolate covered bananas, chocolate nut bark; a whole grain breakfast section featuring honey+goatcheese filled fig muffins, Greek walnut spice cake, almond honey power bars, orange polentina; a Jamacian spice section featuring Jerk Chicken, Jamaican beef patties, sweet potato pudding cake, etc,etc,etc. YUM!! Just had to share.

 
Barbara, do you think you could post the recipe for the pretzel truffles?

Sure Dawn! They are of the stupidly simple variety. I look forward to trying them out!

Peanut Butter and Pretzel Truffles
Eating Well Feb 10
Combine together in a small bowl:
1/2 c crunchy natural PB
1/4 C finely chopped salted pretzels

Freeze until firm, about 15 minutes. Roll into 20 balls (about 1t each). Place on a baking sheet lined with parchment or wax paper; freeze for 1 hour.

Melt 1/2 C milk chocolate chips. Roll frozen balls in melted chcoclate. Refrigerate until chocolate is set.

Barbara, have you made many things from Eating Well?

My out-of-town cousin subscribes and I was oggling her back issues over Thanksgiving. So many dishes looked yummy (and easy on the waistline). She works full-time and has 2 small kids so she said she hasn't taken the time to make anything yet.

Was wondering if you've tried some of their recipes and what you thought. -Tessie

It's funny because I have had the song every party has a pooper that is why I invited you, party pooper, stuck in my head for like a week. And now since I am humming it out loud, my kids are all singing it. Acckkkkkkk!

 
Tessie, I have been buying Eating Well for just over a year. Trying to find a replacement

for all the wonderful recipes I used to find in Bon Apetite. While this doesn't replace the old BA it certainly has a lot of good recipes. The recipes are not "loaded" which I really like and there are lots of wonderful "dinner tonight" recipes. Since I love to bake I have been very pleased with any of the dessert recipes I have tried. I have even added their website to my list of standards when searching for either a particular recipe or inspiration.

Try some of the on line recipes to see what you think. I definitely give it a 2 thumbs up!
