Fermenting foods...I would love any insight you can offer...

I have looked at a number of websites, but what I am really looking for is personal experience.

I love the idea of preserving/pickling/fermenting foods but need guidance.

Just leave things in the fridge for months at a time. That'll ferment the bejeezus out of food.

Uh, not THAT kind of fermentation?
