Finally, a baked oatmeal that I like

I'll write this up in a day or so, but wanted to grab the link while I could. She used fresh plucots as the base; I used 1 cup of my my homemade peach jam with minimal sugar. I also added dried cranberries. Heidi calls for 1 cup of water but I happened to have oat milk and used that instead.

I like that I can cut up the finished dish into 6 servings and zap one for breakfast. She recommends serving with heavy cream, but I found that irritated my morning stomach. So I add a small jar of yogurt to the hot serving.

I've made this three times already and that is three times more than any other baked oatmeal recipe I've tried.

zest of 1 lemon

2 cups rolled oats

1/2 C whole almonds

1 tsp baking soda

scant 1/2 tsp sea salt

1/3 C maple syrup

1 C buttermilk or kefir

1 cup water

1 egg

3 TBL melted butter

2 tsp vanilla

1 pound plucots

Preheat oven to 375

Butter 8" square dish, sprinkle with lemon zest

Blend dry ingredients, put into pan

Mix liquid ingredients, pout over dry ingredients

Bake 35-45 minutes

Makes 6 servings

 
I've never encountered anything like this. My breakfasts are so boring. Frozen peaches should work, n'est-ce pas?
