I tried CL Deviled Eggs with salmon and this was not particularly to my liking. However, I did use SallyBRs way of cooking hard boiled eggs and it worked like a charm! Thank you Sally!
From Saveur was Chilled Carrot Soup with Fines Herbes Mousse. I had this the home of dear SIL as a very good friend of hers is a superior cook. My soup wasn't quite up to his as his was EXTREMELY velvety smooth. I could not get my texture as smooth as his. But the flavor was wonderful and we enjoyed it a lot.
From CL was a Spinach Salad with Gorgonzola, Pistachios and Pepper Jelly Vinaigrette. Since I have a plethora of pepper jelly I gave this a try. I had some bleu cheese in the fridge so I used it instead of gorgonzola. I also added some fresh strawberries and minced young red onion. Delicious!
From CI, May 2014 I tried their Garlic Lime Grilled Pork Tenderloin. WOW! I highly recommend this. They have you cut the tenderloin in half crosswise then pound until 3/4" thick. Then marinate the pork, grill it, to some saved out marinade add a bit of mayo and cilantro and drizzle this over the pork when serving. Holy Cow! That stuff was really good.
Dessert was a Coconut Custard Pie from Foster's Market.
We are happy and very full now. I hope everyone here got to celebrate their holiday with dear ones this weekend. Happy Passover and Happy Easter to all!!!
