Finally made nlb's Pineapple Cream Muffins - WOW!!!

I made only one change - I used the Jello instant coconut cream pudding mix instead of plain vanilla. Even the 3 people who don't like pineapple were woofing them down!

nlb’s Pineapple Cream Muffins

2 c flour

2 tsp baking powder

½ tsp baking soda

3 ½ oz package instant vanilla pudding (I used instant coconut cream pudding)

2/3 cup brown sugar

1 egg, beaten

1 c sour cream (I’ve used yoghurt as well)

8 oz can crushed pineapple, with juice

½ cup oil

Pre-heat oven to 425 degrees F. Spray muffin cups with non-stick cooking spray.

In a large bowl, sift together the flour, baking powder, baking soda, and pudding mix, then stir in the brown sugar.

In a separate bowl, combine the egg and sour cream. Fold in the pineapple and oil. Add the egg-pineapple mixture to the flour mixture, stirring until moistened. Batter will be thick.

Bake for 15 minutes. Makes 15 muffins.

Yes, well, they turned into Accidental Chocolate Cherry Muffins recently.

I was in a hurry, grabbed the pudding without really looking at it, tipped it into the sieve over the flour etc, and then noticed that I had used chocolate pudding. (I have no idea why I had choc pudding in the first place, I only buy pudding for these muffins.)

So I took out 2 tbsp flour, added 2 tbsp cocoa, then reached for the yoghurt (which I often use instead of sour cream). It was vanilla. Tipped it in anyway.

Found a can of cherries, chopped them up and added about a cup of chopped cherries with some juice.

They were really good!

I'll make them on purpose next time!

 
Oh my! DH was just asking if I could do them with some other fruit besides pineapple - THANKS!

 
I might make these for my granddaughter's breakfast on her birthday!

I used sweet cherries, because I prefer the taste.

I have also made them with mango puree - next time I'll put bits of mango in as well.

BTW, I made your cream scones the other day when someone came to tea. They are wonderful!
