Finally! My Porthole infuser arrived today. Wow is it ever gorgeous, even the packaging

Lovely...what will happen to the fresh mint leaves? Will the alcohol keep them green?

Or will they turn brown & mushy like they normally do with aging.?

 
From what I have been reading you infuse whatever you want for a few days

or hours. They suggest placing the Porthole on the dining table as part of the decor to admire during a meal and then using it during service.

It can be used for teas and coffees too!

I didn't get to play with it though last night. Wondering how portable it is and whether I risk bringing it to the Diner en Blanc this Friday....

 
Boy, that was a cook book that made me want to crawl under a rock and

wait to evolve into a higher being that could truly appreciate the effort that went into each minute detail.

I can't remember the last time I cooked with tweezers.

 
My buddy Eric is worked his ass off. He's now the director of Culinary Operations at Alinea.

 
It is more like a fancy teapot, they pitched at table "sculpture".

Funnily enough I am missing some of the components so I can't actually use it. It needs a little key to open the "porthole" and the box was missing these parts.

Waiting for a replacement...

 
Heather, I read an article about the guy that makes them for the resto. I can't remember where.

Saveur or F&W, I'm guessing. Interesting read.
