Finnish Barley Cookies Ohrapiparit

FINNISH BARLEY COOKIES (Ohrapiparit)

Barley is low in gluten and therefore makes light, delicate and crispy cookies. I have made these many times and I just love them.

1 egg
1/2 cup sugar
1/2 cup melted butter
1 1/2 teaspoons ground cinnamon
1 1/2 cups barley flour (I used Bob's Red Mill stone ground barley flour)
1/2 teaspoon baking soda

In a large bowl, whip the egg and sugar. Add the melted butter and cinnamon. Combine the flour and baking soda and mix in until a smooth dough forms. Chill until firm.

Cover baking sheets with parchment paper or lightly grease them. Preheat oven to 400º F.

On lightly floured surface, roll dough out to about 1/8 inch thickness. Cut into 2 inch or 3 inch rounds, then cut each round into halves to make half circles.

Place on prepared baking sheet and bake until lightly browned, about 8 to 10 minutes. Makes about 4 dozen cookies.
