I'm guessing the rye bread cubes and caraway seeds makes it Finnish? I have no idea because everything else is basic. Anyway, I've made it two days in a row, which is nice because I usually get a craving for cauliflower, eat 1/4 of it and then the rest slowly dies a desiccating refrigerated death because I decide to eat nachos for dinner.
Full disclosure: I didn't make it with rye bread because I never buy rye bread. What I do buy is La Brea Jalapeño Cheese Bread..at the 3-day markdown price of $2.99. The only time I eat bread at home is morning toast and I'm not paying $6 for toast. That means I had a lot of La Brea Jalapeño Cheese Bread crumbs.
I also added more veggies: sauteed onions and shredded carrots than the recipe specified because why not.
Recipe from Taste of Home "More Grandma's Favorites"
One-Fourth Recipe
1/4 head small cauliflower, broken into pieces
1 small onion, sliced thin
1 carrot, shredded
1/2 C bread crumbs
1/2 TBL butter
3/4 C shredded cheddar
1 egg
1/4 C flat beer
1/4 tsp dry mustard
1/8 tsp coriander
1/8 tsp white pepper
1/2 tsp Diamond kosher salt
1//4 tsp Za'atar.
Saute onions, carrots and cauliflower with butter until soft. (I put a lid on after a few minutes to lightly steam.)
Mix egg, beer and spices.
Butter dish (I used 7" pie pan), add crumbs and cheese to veggies and pour into dish.
I added a bit more crumbs and shredded cheese to the top and some sesame seeds.
Baked 25 minutes until it looks done. (I'm a bit surprised the sesame seeds did not take on any color. Odd, that.)
