first impressions on fennel pollen...

1. open jar and sniff. pretty wonderful. then again, lots of new herbs are wonderful on first sniff with a lot of essential oils at the top.

2. lick tip of finger, dip into jar and taste a few grains. WOO WOO. big rush of flavor. complex. it sat there on my tongue and developed. mustardy, to fennel-like, to tastes i'm hard pressed to describe other than wonderful. the taste lingered for a good 30 minutes.

3. today was choir rehearsal which meant eat on the fly, so i sauteed chicken breast filets in olive oil with a sparing amount of salt and pollen as suggested and a bit of white wine. i sliced them for sandwiches. very good. prolly outrageous with more herb.

next, i'll braise pork loin with considerably more fennel pollen (to taste) in white wine with some roasted garlic, tomatoes and zucchini.

 
I love the sound of this one. Don't know if I can find the pollen in a store but I'll check today.

rvb, when you said "outrageous" with more...did you mean better outrageous, or probably not so good outrageous?

 
Ordered,will watch for more reviews.Zingerman's shipping was a bit less outrageous than the CA one!
