This was our Valentine's dessert and I loved that it is not sugar laden(i did not drizzle with caramelized sugar which is typical presentation in France). My husband is diabetic--don't you love the irony? I LOVE to bake and he shouldn't eat it!! I give a LOT away much to his chagrin!! Anyway, I used half sugar and half Splenda in the custard with lots of extra vanilla and it was good. I will admit I hate the mess that poaching the meringues creates but love their tenderness. Julia bakes hers in the oven and cuts them in squares--I might try this next.
The custard is thin and can be made ahead. Any creme anglaise recipe would work for this. I tried to make the meringues as attractive as possible but realized after the 1st batch that it is just not that important. They taste great no matter how they look!
