Fondue & Welsh Rarebit anyone still create these? ~A good recipe(s) Please

I love fondue and have been looking for a good recipe(s) that is more dramatic ~ spicier than just ol'cheese.

I grew up with Welsh Rarebit but my recipe is quite bland ~ does anyone have a recipe that has a kick to it. I usually serve it over sliced toast ~ anyone have a better suggestion

My Granmother use to tell me that Welsh Rarebit was a sophisticated meal so each time I eat it I think that and remember the way her and my mother would set the table with good china & silverware to serve this meal.

 
I love fondue too. We just had a "do you fondue" party

Last Friday. I make mine with a mixture of 3 to 4 cheeses, kirsch, wine, nutmeg. If that is different than yours I can send the recipe. I also looked in my binder and found several recipes for different fondue, but I have not tried them. I'll list them and if you want any of the recipes I'll type them

Spanish Fondue - jalapenos, jack cheese, champagne, onions, cream, bleu cheese

Fondue Vudu - hard cider, smoked and reg gouda,curry

Apple-cider-cheddar fondue

REC: Gruyere Fondue With Caramelized Shallots

Gruyere Fondue With Caramelized Shallots

1 tablespoon butter
1 1/4 cups thinly sliced shallots (about 6 ounces)
1 teaspoon sugar
1 1/2 cups dry white wine (or more)
14 ounces grated gruyere cheese (about 3 1/2 cups packed)
2 tablespoons all-purpose flour (I used cornstarch)
1 pinch ground nutmeg
1 sourdough baguette, cut into 1 inch cubes

Melt butter in heavy medium skillet over medium heat.
Add thinly sliced shallots and sauté 3 minutes.
Reduce heat to low; sprinkle shallots with sugar, salt and pepper.
Sauté until shallots are caramelized, about 15 minutes.
Transfer shallots to small bowl.
Add 1 1/2 cups wine to skillet; boil 1 minute.
Pour wine into heavy medium saucepan; set over medium-low heat.
Toss cheese with flour (cornstarch)in medium bowl to coat.
Add half of caramelized shallots to wine; add cheese mixture by handfuls, stirring until cheese melts and is smooth before adding more.
Thin with more wine if mixture is too thick.
Season with nutmeg, salt and pepper.
Transfer cheese mixture to fondue pot.

Top fondue with remaining caramelized shallots. Serve with bread cubes

Rec: Chinese Fondue

This has been on my list to try, I am thinking about this weekend.

Chinese Fondue

4 servings
1½ hours 30 min prep
500 ml red wine
6 small onions, cut in rings
3 garlic cloves, sliced
1/4 lb butter
2 (10 1/2 ounce) cans beef consomme or beef broth
2 (10 1/2 ounce) cans water
2 tablespoons chili sauce or salsa or ketchup
1 bay leaf
1 cup chopped parsley
salt and pepper

Sauté the onions and garlic and then add the rest of the ingredients.
Simmer the broth for about an hour and then pour into a fondue pot.
Enjoy with pieces of beef, chicken, seafood and vegetables!

This wonderful fondue recipe came from my Mother-in-law. It is a rich, delicious broth that you can cook with any kind of meat or vegetable. We always have this for New Year's Eve with friends. Our favorite dipping sauces are ginger and mustard sauce, seafood cocktail and Bearnaise sauce. My husband proposed to me over this dinner!
