Food Science Question: rinsing noodles for soup

I'm sick with a bad cold so I made soup. I usually rinse al dente (bagged, Mueller Homestyle) noodles b4 adding to soup, but my stock was very rich so I mostly drained them and tossed into the soup. They absorbed more liquid and became mushy/floury. Dh said that rinsing/cooling the noodles lowers temp of soup SO noodles do not become overcooked. I don't think that's it. What do you think? I don't know the science, hope you are feeling better. I actually never add my noodles

directly into the soup. Alway prepare separately, and when serving the soup, I put the noodles in the bowl, then ladle soup. Helps with leftovers, and also, in our family, some prefer different ratio's of soup / noodles.

 
Agree. We keep other noodles separate - elbows, ditalini

In almost 45 years of knowing my husband, I have never been such a complete disaster. I can see why people get divorced in their 60's smileys/wink.gif

Printed this recipe. It does sound wonderful! Hopefully Dh will continue to remain well. If not, this recipe will be my next pot of soup. Colleen

 
uh oh.... Pink eye is not good! Dr should Rx something that will get you back on track. Wash

I always add the noodles when recipes say to, and I end up with swollen noodles or pasta

some of it falls apart the next day, some (Conchiglie) work better than others, but all get fatter and then I have too much of a nooddley soup.. I have tried holding the cooked noodle out but they stick together. I have tossed with evoo, but don't like the extra grease in my soup. What to do?

 
Yes, and wash hands, keep away from eyes, use hand sanitizer throughout the day

and don't touch the other family members unless your hands are clean. Keep face away from them. Never had it but just hear others telling their tales.

just quick rinse them under hot tap water and shake to remove excess water. Or you can just pull off/out a bunch of noodles and either pour piping hot soup over and serve OR get the soup hot, add noodles to pan, heat briefly and serve.

I gave up cooking the noodles in the soup because I hate that so much broth is absorbed. I just need to cook less noodles - but I love the noodles, too. Colleen

 
Haven't had it in 25 years!

Not at all motivated to touch it and it's not painful or itchy but more thick feeling. Keeping hands very, very clean. Drops every 4 hours for 7 days! Colleen

 
I guess I make enough broth and don't add so many noodles or pasta that it takes it all up

It's still very much soup with plenty of broth.
