Football Season! It's the first game of the season and hub is already cranking in the other room.

He is a die hard Viking fan and if they lose, uggg. Luckily, it is the only sport he watches and he has such hope. (smile)

What do you guys serve for football game munchies? I would like to start serving him some on game day. I can hear him talking to himself and the television in the other room, and it isn't pretty. Help!

 
Some suggestions: Spinach-Stuffed Mushrooms (in T&T), guacamole and chips, buffalo chicken dip,

blue cheese broiled tomatoes (in T&T), bruschetta, chicken wings and dip...

Chile con queso...I don't have a recipe handy, but I'm guessing someone will.

Hummus and pita wedges or veggies.

 
Nachos!!! Cheese and jalapeno, black bean and feta cheese, Or, of course

the old Texas favorite, chips and queso! Velveeta, rotel and cream --- soooo good for you ---- HA!

 
I 2nd the buffalo chicken dip, crab / cream cheese dip,

-sausage wrapped in puffed pastry; There are all kinds of variations chicken apple with a bit of maple syrup, spicy chorizo and cheese , smoked sausage and mustard etc. Bake, slice and serve.
-of course the gourmet lil smokies in bbq sauce smileys/smile.gif (my 7 yr old loves these)
-various wonton type appetizers - I have a chicken and peach on I want to try; there's on with sausage and cheese
- veggies with dip
- fruit with dip
- loaded fries (cheese, bacon, green onions sour cream

 
a Viking fan!! the funniest commercial on Sunday was the Dad taking out the Viking helmet to pass

on to the son who was now old enough to wear it on game day. too funny. I grew up in NW Indiana and we were diehard Bears fans---no Colts yet. Now, when Colts/Bears play, like on Sunday, I am so conflicted. Another margarita helps though. just kidding. It was a diet Dr Pepper day.

Oh yeah, both of us are Viking fans,

and Chargers, of course. I figured out when I was a kid, that if I wanted to spend time with my dad on Sundays that I had better learn to like football. So glad I did.

Rec: Italian Style Wontons

Disclaimer!: these are from handwritten notes I scribbled on a piece of paper from a magazine in a dr.s office. And now have NO idea where I got them or if all info is correct!

Rec: Italian Style Wontons

2 oz mozerella
1/4 c basil
1/4 c walnuts (i used pine nuts)
3 T sun dried tomatoes (drained)
1 green onion, sliced
24 wontons
marinara for dipping

Preheat oven to 300. Combine mozerella, basil, walnuts, tomatoes and onion in a food processor. Pulse till combined.

Place rounded teaspoon on wonton. Fold in half to make triangle. Fold long edge corners together and seal with water.

Bake till golden brown (I don't have a time here..7 - 10 min was about right.

Or you could fry them.

Serve with Marinara

 
Rec: Chicken and Peach Wontons

Chicken and Peach Wontons

8 oz ground chicken or turkey
1/4 c pineapple juice
3 T green onion, chopped
1 T soy sauce
1 t grated ginger
1/2 c finely chopped fresh or frozen peaches
1/4 t crushed red pepper
36 wontons

1. Brown chicken or turkey. Drain. Add juice, onion, soy sauce, ginger. Bring to a boil. Simmer 4 min or until liquid is evaporated. Stir in peaches and pepper.

2. To fill, spoon 1 rounded teaspoon of the chicken mixture into center of each wonton wrapper. Brush edges lightly with water. Fold the four sides together toward center; pinch corners and seams closed.

3. Meanwhile, heat 2 inches of oil in a heavy saucepan or deep fryer to 365F. Fry wontons, 4 at a time, for 1-1/2 to 2 minutes or until golden, turning once. Remove wontons from oil; drain on paper towels. Place fried wontons in a single layer on a baking sheet. Keep warm in a 300F oven while frying remaining wontons. Serve warm. Makes 36 wontons.

4. Make Ahead: Fry wontons, drain, and cool. Wrap gently in foil. Freeze
for up to 1 month. To serve, place unwrapped frozen wontons on a baking
sheet. Bake, uncovered, in a 400F oven for 5 to 7 minutes or until
heated through.

 
Rec: Bob Evans Sausage Cups

Ok this is too easy, but my boys love them...so I thought I'd share.

1 lb sausage (original)
1 pkg wonton wrappers
1 c monteray jack cheese
1 c cheddar cheese
1/2 c ranch dressing

Brown sausage and drain.

Spray mini muffin pan with non stick spray. Insert wonton wrapper to make a cup. Bake 350 for 5 min.

Mix sausage, cheeses and ranch. Fill cups and bake till bubbly ~ 10 min.

NOTE: I just put the filling in unbaked cups and bake for 7 min or so. The wontons got too crispy when I did the recipe as is.
