For Ang and anyone else that was interested in the Stuffed Acorn Squash

that was in a link for recipes using apples, I made it a few days ago. It was OK. Not Wow, but good. I had 1 acorn squash so I just cut the recipe in half. Well, I over stuffed the two halves and then put the rest of the stuffing in a small casserole dish! The proportion was waaay off. But that's alright. thanks orchid. I baked my squash last night. filled it with some leftover taco meat(sounds weird)

that I added black beans and corn to, and it was surprisingly delish---the contrast between sweet squash and the spicy salty meat was quite nice.

 
No, actually, I think it sounds really good. I'll remember that. And the

left over stuffing was really good. I'm thinking that the extra days waiting in the fridge may have brought the flavors together. I wasn't going to keep the recipe but now I've changed my mind. I saw some chicken apple sausage that I think would be really nice in it. The stuffing would be a good side with some grilled chicken breasts. I'm going to try it again sometime.
