2 cups sugar
1/2 cup brown sugar
1/2 tsp soda
1/4 tsp salt
1/8 tsp cinnamon
2 TBL corn syrup
1 cup evaporated goat's milk (original recipe calls for buttermilk & 1 tsp. soda & no corn syrup)
1/4 cup unsalted butter
2 cups lightly toasted pecan halves
Mix sugars, soda, salt, cinnamon, corn syrup and milk in large saucepan. Drop in butter. Cook to 238 on a candy thermometer (soft ball) WITHOUT STIRRING. Immediately remove from heat, stir in pecans and beat with a spoon for 5 minutes. Drop on waxed paper (or silpat) lined baking sheet in 2 to 2 1/2 inch circles. Makes about two dozen.
I'm sorry to say I wasted about a third of mine, because candy usually takes so long I left the room-DOES THIS EVER boil over easily, so watch it. Mine went all over the stove, burner bib & down under the stove top. An unwatched pot will definitely boil!
