It was really, really good.
My tweaks:
I added in some onion quarters to the vegetable mix. Also, I just roasted everything at the same time in separate pans. About halfway through, I basted the vegetables with some of the fat from the chicken.
Not fast, but easy and flavorful. I think next time I will try it boneless/skinless chicken thighs.
