Fat free half and half works fine in coffee and cooking. For other dairy products, I prefer the low

fat versions: sour cream, cottage cheese, cream cheese.

Tillamook reduced fat medium cheddar is very good, but it's actually only slightly lower-calorie than the full-fat version (90 cal/oz. vs. 110 cal/oz.)

 
I like the greek-style fat-free yogurt and..

the fat-free cultured buttermilk for baking and for making my chilequelas.
As for sour cream and cream cheese, I like the reduced fat rather than the totally FF.

 
Pace Picante Sauce is fat free and can spice up all kinds of otherwise bland dishes

I used to mix Pace Picante Sauce with cottage cheese, a little parmesan, garlic and pepper for a baked potato topping. I pour Pace over eggs, mix it into all kinds of dinner-type dishes, use it as a salad dressing sometimes too. It is a fat-free best friend.

 
Funny you should say that...

I just had a shrimp burrito for lunch. I made it with leftover grilled shrimp, brown rice, some of the veggies out of the soup I made, fresh cilantro, all wrapped in a Santa Fe Tortilla Co. whole wheat tortilla (it has 100 calories with 13 grams of carbs and 7 grams of fiber. I get these at Sam's and they are so much better than the other low carb ones I have tried.) and topped with lots of Pace Picante Salsa. It was delicious. I made hubby a grilled chicken one, same filling with a slice of colby jack cheese on top. He cannot stand burritos with "fillers", but he said it was really good.
I will try using your cottage cheese idea with baked potatoes later this week, and see how it flies with hubby. It sounds great to me! Thanks!
