Just read your Blog post on grilled cheese sammies. Here is a quick 'mater soup because sometimes you just need a tomato soup that is quick enough to make in time to eat with your grilled cheese. smileys/smile.gif
Eight Minute Creamy Tomato Soup
~ Makes about 5 cups
2 T. unsalted butter
1/2 c. chopped onions
1 (28oz) can diced tomatoes
1 c. chicken stock
1 c. heavy cream
Sour cream for garnish (optional)
Melt butter in a 3 quart saucepan. Add onions and sauté for 2 min. Add tomatoes, chicken stock, and cream to onions. Bring to a boil, reduce heat and simmer 5 min.
Pour into a blender or food processor (be careful not to overfill) and blend until smooth. Serve with sour cream if desired.
