I'm going through tons of printed recipes getting ready for an eventual move. Printed this in 2000 when I was lo-carbing (need to get back on that wagon) and enjoyed it very much.
Dottie-fied Cocoa Mousse
1 cup heavy cream (reserve 2 tablespoons)
3 oz cream cheese
1 T Vanilla Extract
1 T unsweetened cocoa powder
1 t instant coffee crystals
1/4 cup chopped pecans
1/4 cup Splenda
Beat cream until stiff and add in softened cream cheese. Beat more. Dissolve the coffee in 2T cream and beat in. Then add the vanilla, Splenda, and cocoa powder. Beat until well blended and fold in nuts. Keep refrigerated.
