does it need to be eaten warm, or is this something you could served at room T after they've been grilled? I'm thinking of the farmer's market (where I won't be grilling!)

I made the Nigella recipe, with the carmelized sugar. I have a feeling if it sat for too long,

the juiciness of the pineapple would make the "brulee" effect sweat off. If you just strictly grilled the pineapple, it would probably be fine, but it would be nice if you could find away to keep the chocolate sauce warm, like in a fondue pot.

with a small container of belgian chocolate sauce they could dunk the chunks into. You're right about the carmelized sugar, though. Maybe I should brink a portable blowtorch & 'crisp' them up when they buy them! smileys/smile.gif

 
It's probably just as tasty without the sugar, but I can imagine the "brulee"

would make for an enticing and unique "gimic" that would set them apart from other options at the market. I think the sm. trays are a good idea too. The Nigella recipe calls for malibu rum in the dark choc. sauce, which helped thin the sauce and gave it a nice tropical-y hint of coconut. Maybe someone can help you figure out how to flame the rum first so you could evaporate the alcohol and still include it.

 
I think your FM stand will be mobbed it you start flaming at the table - a great show!

You will have to flame them in a heat proof container and then transfer them to the take-away trays.

Sounds like fun!

 
i'm thinking about this seriously now - i just asked the director if they'd have an issue with me

Mine sat for awhile before we actually ate it...

it was actually cooled off when we ate it and it tasted great. I agree, though, I wouldn't have wanted it to sit a long time. Mine sat about 20 minutes before we ate it.
