For those who've made Model Bakery English Muffins -- could I make in elec skillet?

It says to use cast iron and heat to 450F. Well, I have an OLD cooktop. I can't fry chicken in it because one setting is too hot and the next too cold, so I use an electric skillet.

Do you think it would works? I'm not sure why they say cast iron, to get a better rise? Crispness?

 
I would say an electric skillet would be a good choice. . .

I have cooked other recipes for english muffins on soapstone griddles, cast iron griddles and cast iron pans. You need something to keep an even heat. Think of that English muffin like a giant pancake: gotta cook on high, even heat.

And with your stove, the electric griddle would be the only choice, no?

 
The frying pan would be cooking just like a frying pan or griddle would--over bottom heat. . .

Though the heat will fluctuate (I think), I would just maybe set the heat just a little higher and keep a close eye on the muffins while cooking.

 
I'd give it a try because of your "problem", but I am not sure an electric

frying pan will heat that high.
Why not try it in the cast iron on the "too high" element and sort of shuffle the pan off and on it as it cooks.
You might be able to heat the cast iron on the element and then put in your oven at 450* and watch it closely?

 
I thought a big part of this process was the ghee crisping up the bread.

Will you be able to keep enough on the...oh, wait..hold on...you're saying ELECTRIC SKILLET and I'm *reading* ELECTRIC GRIDDLE.

Never mind.

If you've got sides, go for it. I'll bet the temperature would be more even.

I had a tiny packet of King Arthur flour bread enhancer...(shoot, what was that called? It got tossed at the pantry purge during The Great Weevil Infestation of 2015...damn, I can't remember anything...). I wasn't sure if that made the bread so delightfully chewy but it was a wonder. I ate my way through two batches of the stuff, which is why I have not made another batch since.

I must have an old electric frying pan (it is), because it has heats up to 450. . .

and I mean it is old, and very thick; it is nice in which to fry chicken.

If her pan has temps up to 450, it would be worth a try.
