Forgive the sheer naivity [read: stupidity] of this question, but will my home-made lard

make fried chicken taste porky?

Mom used Crisco, so that's all I know. But now I have 1.5 quarts of the home-made stuff in my freezer and I'd like to dedicate it to fried chicken. But I still want the chicken to taste like chicken.

Can you tell I don't fry chicken very often?

 
I've had experience making lard then using it for fried chicken

Mine did not make the chicken taste porky at all- it was sooooooo good. Just try it with a small piece of chicken to test it.

 
Is there a big difference in the flavours of homemade and store-bought lards? I've never made it

and probably never will now, but I think about all the pastries that moms have been making for years, using lard.

Is "porky" a bad thing? I know it was a bad movie. I've never fried chicken in lard but I have

used non-hydrogenated lard for other things and would say it has a meaty, savory taste that would blend right in. To me Crisco has a slightly chemical taste, so I bet this would be an improvement.

If you're going to sin you should enjoy it completely.

 
No. It really doesn't smell like pork. I use it for tamale dough & you can't taste the pork, just

rich fat flavor.

 
I render pork lard for tamales as well. On a recent episode of Diners, Drive-ins and Dives...

...one of the places used pork lard to deep-fry their fried chicken. People flocked to the place to get it.

I say, "go for it"!
