I couldn’t access my old user name, Carianna-in-WA from years and years ago. But I am making Dawn’s Creamy Enchiladas tonight and that led me here.

I too love it for leftover turkey. Enchiladas from leftovers are the only reason to have Thanksgiving dinner Imho!
