Found another use for homemade Thai green curry paste: omelette. Delicious.

For a friend this morning I made an omelette with sauteed red sweet pepper, onion and mushrooms. I put about a tbsp of homemade Thai green curry paste in the egg mixture. It was great! I like finding unconventional ways of using ingredients. Stirring in my brain is Thai green curry pizza.....hmmm. When I try it I'll post. Will figure out what to use as a pizza sauce...maybe a coconut sauce with no sweet added. With the curry paste. Shrimp and veggies on top? Any ideas?

 
The Thai Green Chili Omelette!

That will be on my menu for next weekend. Love love love it! I'm always looking for ways to turn breakfast on its head and weekend breakfast is a very big deal at our house.

I love playing with pizza too. I think your green chili Thai pizza is yearning for fresh basil, shrimp, and chopped garlic. What about a roasted red pepper and coconut sauce?

Some of my fun ones:

Sunday dinner pizza--Potato dough spread with mashed potatoes, chicken gravy, picked fried chicken, corn kernels, and topped with cheddar, provolone, and mozzarella.

Santa Fe pizza--whole wheat/masa dough spread with garlic, black bean and green chili frijoles refritos, green chili sauce, onions, shredded meat (pork, beef or chicken), cilantro, red bell peppers, chopped garlic, monterrey jack cheese.

Down home breakfast pizza: Angel biscuit dough spread with sausage gravy, chopped bacon, eggs, and cheddar. Make little wells in the topping for each slice and break an egg in the depression before topping with cheese.

 
Yes- roasted red pepper and coconut sauce. The curry paste has....

lots of cilantro in it, lemongrass, Kaffir lime leaves, cumin and coriander seed, etc so I think basil is out but the rest of the idea I love.

Yow- pizza madness at your house! What fun!! Love all the ideas.

 
I loved the Thai green curry paste mixed into turkey burgers...

and these ideas will be printed for future reference.

Any similar ideas for the red curry paste? I seem to have a plethora, since a friend gifted me with a jar and I already had one.

 
Judy, great idea! I'd stir the red curry paste into pork or chicken sausage. Also,

I'd be inclined to mix it with some miso or butter and use it as a rub for roast chicken. Straight up red curry paste has a kick so I'm thinking of ways to buffer that.
