Found this recipe in a local paper today. Sounds a little different with the addition of apples

Sunrise Casserole From SR Riley's Musical Cafe Bridgeton NJ

1 pound lean bulk sausage

2 large red apples-cored,peeled and thinly sliced

5 eggs beaten

1 1/2 cups milk

1 pound grated sharp cheddar cheese

1/2 tsp. dry mustard

Brown sausage in skillet(reserve fat) and place in 13x9x2 glass baking dish. Saute apples in reserved fat. Spread over sausage. Combine remaining ingredients in mixing bowl, pour over sausage and apples. Cover with foil and refrigerate overnight. When ready to serve preheat oven to 350. Bake covered for 30 minutes. Remove foil and continue baking for 20 more minutes. Let stand 5-10 minutes before serving.

Autumn Salad with Walnuts

2 Granny Smith apples, Chilled

2 Red Delicious apples, Chilled

1/2 cup sherry vinegar

1 cup chopped celery

3 scallions, cut diagonally into 1/2" pieces

1/2 cup shelled walnut halves

4-5 tablespoons of walnut oil

Core and chop apples with skins on. Toss in bowl with sherry vinegar. Add celery, scallions and walnuts. Drizzle with walnut oil and toss again. Serve immediately.
