fozen heavy whipping cream - a question

I have a pint of frozen heavy whipping cream. I plan to make creamed spinach and creme brulee. Will the thawed cream behave as well as fresh?

i've had yet more health probs, but hopefully i'll be getting back into the swing of things.

the latest chapter in the perils of rvb was a potassium blood level that was high enough to be fatal. luckily i have a neurologist who's on his toes and got me on my way to the emergency room (blessedly, laur was home) to get me depotassiumed.
