it can hold temps pretty good. I am looking forward to hot weather so I can turn the oven on--outside. Essentially it is an oven with smoke. And it makes more smoke when cooking "low and slow" (ribs, tough cuts of beef like brisket, etc) than when on higher baking temps. Gonna try some fresh bread this week.
I have a grill for searing and grilling; as the pellet grill does not sear all that well, I will be using it to do reverse sears after I have cooked/smoked something.

At this point in our lives, I love our big Dynasty Gas Grill. Too big for us now....but I love being able to get immediate heat, the side gas burner for smelly or really grease popping stuff, and the ease of it all .
On, cook, off! Occasional serious cleaning.
