FRC - I'm having my aunt over for a turkey dinner next week, and her request

for sides leaves me wondering what to get.

To her, the thought of garlic is repulsive and she's 90, and so has to stay away from anything hot or spicey (although she loves Chinese food, which I am still trying to understand!).

She really is pretty flexible, and I am looking forward to the dinner, but she's just kind of a picky eater. And she's better than my mom. (I wonder how I ended up so adventurous!)

No spinach, no squash or root vegetables (except for mashed potatoes that I am having, without garlic I usually put in them).

Because I am on a limited carb diet, I don't really want starchy vegetables like corn, beans, or carrots, and no dressing.

Besides salad, what's left? Maybe because it's Friday, and my mind is tired... but is there anything that stands out as fitting the bill? Thanks in advance!

 
A green veggie - brussel sprouts are always nice, though I don't know how

to make then without using garlic! smileys/wink.gif

All low carb and can be prepared in numerous ways.

 
fix the starchies for your aunt and a dish or 2 for yourself.

make em simple so you're not frazzled before you sit down.

as in: mash the tates and put garlic in some of them. sit downwind.

 
two very nice braised/roasted cabbage recipies in T&T that are lo lo carb.

My mom is 88 and LOVES fresh green beans (older folks don't get this too often) also the cabbage is

a good idea. A cafeteria (Luby's) fixes it with a little bacon grease added in for flavor. Very good.

 
Simple steamed green beans with some butter or oil and lemon juice and/or zest, salt and pepper?...

I have some great green bean and asparagus recipes, but they may not be to her taste: "Citrus Green Bean Salad," "Parmesan Green Beans," Roasted Asparagus With Crisp Shallots," etc. I'll post them if you think she'd like them.

 
What about Josh's popcorn cauliflower? Or Joe's asparagus recipe

and leave out the garlic?

Mix together to make a marinade:

2 Tbs. olive oil
1 Tbs. dry white wine
1 Tbs. vinegar
3 garic cloves, crushed in a garlic press
1/4 tsp. ground herbs de Provence
Salt and pepper

Pour marinade over:

1-1/4 lbs. asparagus and let marinate 15 minutes.

Preheat oven to 400*F.

Sprinkle on a plate:

1 cup grated Parmesan cheese

Roll the asparagus in the cheese and arrange in a single layer on an ovenproof platter. Pour any remaining marinade over the asparagus and bake in the preheated oven for 15-20 minutes, until lightly browned and sizzling hot. Garnish with:

Lemon wedges
Sprigs of Italian parsley

Serve immediately.

My daughter (who is 6 and previously hated asparagus) and I fight over the last of Joe's asparagus!

 
how about roasted broccoli? toss with a little olive oil, lightly salt and pepper...

then roast in 350 deg. oven about 15 min or so. This is the way my DH likes it best. Toss it a couple of times while it's cooking. Or.... once it's roasted, puree it with a little chicken stock, bit of cream, and eureka - broccoli soup!

Thanks for reminding me of this again! I finally have a new oven-proof platter,

(I broke my last one years ago) so it's time for me to dust off this recipe.

 
Green beans seem to fit both of our tastes... thanks everyone for the ideas. I was thinking "green"

too, but I like these variations for simple green beans. Broccoli too. Asparagus - well, maybe next time ;o)

 
Here ya go, Dawn - REC: Citrus Green Bean Salad

CITRUS GREEN BEAN SALAD

2 pounds green beans, trimmed and cut into 1-inch pieces (I halved them)

1/2 cup fresh orange juice
1 tablespoon finely grated orange zest
3 tablespoons balsamic vinegar
1 teaspoon sugar (I omitted this)
1 teaspoon coarse-grain mustard (I used creamy Dijon)
3/4 teaspoon salt (I used a few pinches, to taste)
1/2 cup olive oil (I used about 6 Tbsp extra virgin olive oil)
1/2 cup finely chopped red onion
Freshly ground pepper, to taste

In a large saucepan of boiling water, cook the beans until just crisp-tender, about 3 minutes. (I steamed them). Drain and set aside.

In jar with a tight fitting lid, shake together all remaining ingredients. (In a medium mixing bowl, I whisked together all the ingredients, except the oil, then gradually whisked in the oil).

Toss beans with dressing shortly before serving. Serve at room temperature or slightly chilled.

Serves 6-8.

Green bean bundles are fun. Wrap a bundle with a poached scallion green and

add a few strips of roasted red pepper to the bundle for color and steam till tender. drizzle with some browned butter. very nice presentation. I think there are other variations out here.
