FRC I've always wondered, those of you non-procrastinators who bake your Xmas cookies ahead of time,

(of which I am not one!), how do you keep them from not being stale?! Do you freeze them and decorate later, or do you just keep them in a very airtight container? I usually end up baking the day before, and would love to do them this weekend instead.

I store mine in holiday tins like mom did.

However, I almost posted a question on how ahead of time can I make them, because I seem to always wait too long and then have too many tasks on my plate. The iced sugar cookies are the big time takers and I'd like to start earlier, but I too never know how early is too early. Looking forward to what everyone else thinks.

 
Every year I tell myself - "next year I'm going to start earlier and freeze them". Here I am again

rushing around the last few days. Oh well, it probably wouldn't be as much fun.

 
I make about 1,000 cookies (12 different kinds) and I start one week

before. I keep six of the 12 kinds in the freezer, and these are the ones I bake first. The other ones keep very well in cookie tins.

 
I put them all in air tight plastic containers, then put all of the containers

in a plastic storage bin with locking lid, then up in the attic. Keeps them pretty cold, without freezing. smileys/smile.gif

That is a lot of cookies. I think I made 24 this year. As in 24 cookies smileys/smile.gif
