FRC: Just made my first avocado toast w/a perfect poached egg on top!

Loved this method for poached eggs!

Dip cracked large egg(s) from coffee cup into 1" boiling water and set timer for 2 minutes. Take off heat and leave 5-6 minutes, uncovered, swirling lightly when you take off heat and then several times during the rest period. Remove egg from water in slotted spoon to paper towel (I left in spoon and dried spoon bottom only). At 5 minutes the poached eggs were perfect - the best that I've ever made smileys/wink.gif

Avocado Toast

Place perfect egg atop 1/2 of sliced or mashed seasoned avocado on lightly buttered whole grain toast. Drizzle with olive oil, sea salt and fresh pepper.

Have you tried toasting the bread, then bathing with browned butter?

Then top with chunked, slightly mashed avocado, then topped with flakey sea salt. The browned butter is key, and so yummy! The cookbook Keepers has a section on "Toast for Dinner" and offers all sorts of ways to do toast. I have not read it yet, but am eager to do so. Loving that book.

 
Just seeing this! Browned butter is a great suggestion!

I can imagine how much better the avocado toast will be. We have 2 ripening on the counter - I will try this later this week. Thanks for sharing smileys/smile.gif Colleen
