Hey all. Since you've been on this crazy food odessy with me, I wanted to share another milestone. I was hired by WA magazine to produce a piece for them. I went on a 3 day media tour of Whatcom county and it was utterly fascinating. This piece on the buffalo farm is extrapolated from a longer piece I wrote with three different stops including a lavender farm and cheesemakers. They cut the photos I submitted from the buffalo ranch but now that this is published, I'll write something different for my blog--and include the photos.

After reading this...now I wish I'd used a more journalistic approach and eliminated the "I" out of it. Ah well...next time.

Congratulations Traca! I enjoyed the article. There is a buffalo meat source near me and I must

check it out.

 
Know that when you try buffalo, it has very little fat & cooks quickly. One option is to

wrap it in caul fat, or pan sear it on a screaming hot pan. Super quick.
