Freezing cookies: will all of these freeze well?

My sister is giving a cookie table for her friend's daughter's wedding Labor Day weekend. Lyn is making 10 dozen each of the following items:

Lady locks

chocolate chip

lemon cookies

twix thumbprint

cranberry bliss

chocolate thumbprints

flaky pineapple squares

almond joy bites

nutroll (she'll make 10 rolls)

kiss cookies

Mexican wedding cookies

orange drop cookies

Does anyone see a problem with making/freezing any of these? I'm a little concerned about the pineapple squares and also think she should prep/freeze the dough, but bake the chocolate chip and kiss cookies the day before.

My mom has a BIG restaurant size convection oven, but Lyn wants to make as much ahead of time as possible.

Also, any ideas on displays, taking cookies home, etc are very welcome.

You should have no problems making ahead & freezing any of them.

However, the Flaky Pineapple I also have reservations on as I have no experience with this cookie.

 
I agree! As for presentation/take home

I've bought many, very inexpensive white, rectangle platters that I like to display cookies. I've also used cupcake towers, etc (slightly overlapping cookies so I could fit alot. You can even do layers of cookies to fit more on a plate/tower.

You may want to offer glassine bags for guests to take home cookies. When we had our 20th anniversary party I stamped them with a pretty "thank you" stamp I bought at Michaels.
