FRENCH ONION SOUP

USE A CROCK POT TO CREATE THIS SOUP

Optional: (Per bowl Serving) add mozzerella & toasted crutons to each individual bowl serving

IMPORTANT: do try to use vadallia onions or substitute yellow onions NEVER use red onions

3 large onions -- thinly sliced

1/2 cup butter (unsalted preferred) *if using salted butter eliminate salt

from recipe ** or use cooking spray

and eliminate butter (HEALTHIER CHOICE)

6 beef bouillon cubes

4 cups hot water

1 teaspoon Worcestershire sauce

1/2 teaspoon salt

4 slices toasted French bread

1/4 cup grated parmesan cheese

Step 1

In large skillet, cook onions in butter(or use cooking spray (preferred) to sauté onions and eliminate the use of butter) butter until lightly browned.

Step 2

Transfer lightly browned sautéd onions into a crock-pot

Step 3

Add beef bouillon, water, Worcestershire sauce, and salt. Gently stir to mix with sautéd onions.

Step 4

Cover and cook in crock-pot on low 4 to 6 hours. Stir often.

Step 5

Top each bowl with toasted French bread sprinkled with Parmesan cheese

 
Another site discussed a method of caramelizing onions that I'm trying this afternoon/tomorrow.

You fill the crock pot with sliced onions (not Vidalia) to the very top. Sprinkle with balsamic and add a stick of butter. Cook on low for 24 hours. When they're done you can freeze them and use as needed or take some, add a cup or red wine, reduce it, and add some rich chicken broth.

I think I spend so much time standing at the stove caramelizing onions that this method is worth a try! I'll report on results.

I think they have the best French Onion Soup. I asked the cook, who, for professional reasons, could not give me the full recipe, but when I came up with this, he said it was close (we got to be friends, actually a neighbor), he tried it and was satisifed that I was close. I find this one easy to make and the crock pot does the majority of the work. The onions cook just right.

 
Beware, this can smell up your whole house, and while a bit is nice, for 24 hours, not so nice. Put

in garage, if possible.

 
Cut the onion in half then feed it through the FP slicing unit. I made this just once.

My onions did not carmelize like I had hoped. Maybe I needed to leave them even longer. Outside is best if you can because even in the garage the onion smell permeates the house.

 
I know that chopping onions in the FP causes too much water to exude, then they

never fry up, just steam. So I always use a knife on onions. Perhaps slicing in the FP can cause the same problems?

Making the French Onion Soup is easy and DOES NOT SMELL

This recipe is not difficult, it does NOT stink up your house AND you don't have to stand and stir. It cooks itself. It will NOT ruin your crockpot. The onions are not carmelized and definately taste great. Claim Jumper chef says you shouldn't carmalize the onions for this recipe.... IT DOESN'T NEED IT. that's why this is easy and quite tasty
