Fresh basil

Hi, everyone!! Haven't been here for absolute ages, but for "absolute ages" things have been chaotic here -- building on, renovations, kitchen gutted, etc. We rent a place next door ... No time for fun!!

I saw that days ago people talked about basil, which is basically only useable when fresh, apart from making pesto.

Here is another method of PRESERVING FRESH BASIL:

In a processor whizz 4 quite tightly packed cups of fresh, clean basil leaves. Add 1/3 cup (more or less) of olive oil, to form a paste.

Spray ice cube containers with nonstick spray, fill each hole with the basil paste, and freeze overnight. Then tip into ziplocks, carefully press out as much air as possible, zip, label and freeze.

Use in midwinter in salad dressings or for any dish where you'd like a taste of summer.

I must confess that I do not know how to add links yet, but even so I can put it in the text, I suppose. I did read the instructions, but they won't work for me at this stage!!

As my husband always says when things "won't work for me" : "it's the operator's fault!"

The basil recipe isn't there -- I've just put up the thing today and my eyes are stinging with concentration, ROFL!!

Either my chaotic home circumstances are addling my brain, or it's old age. The basil tip was one I posted earlier today.

Good grief, people, how do YOU get through the upheaval of home renovations??

By the way, I'm getting a brand new kitchen!! At last, after years of moaning!

I'm so excited that I got THAT far, I just don't know how anyone else ever finds out about one's blog, ROFL!!

You must have that crunchy shrimp recipe -- I'll post it at some later date. Even tomorrow, if I get a chance.
