Fresh black eyed peas on sale!! Suggestions?NT

Just cut up some bacon and fry it until it is starting to brown, add peas, water

salt and pepper and cook until done. Where in the world have you found fresh blackeyed peas at this time of the year? Are they truly fresh and not those reconstituted dried ones?

 
you may be right...I saw them advertised as "fresh" at a respected (more)

local supermarket, but on doing my research, the company says the peas are "pre-soaked"....

Be sure they don't smell "moldy" either. They pull them out for Hoppin' John for the New Year

and TWICE I've been suckered into buying them and they smelled moldy when I got them home.

If they are good, cut up equal parts bacon pieces and diced onion. Add the beans and saute until the bacon is done. Then cover with water and gently cook until the water evaporates. The beans should be done by then.

 
I hate to burst your bubble, but I have always found those to be vile.

You'd be better off just cooking dry or frozen ones. The only place I ever find fresh black eyed peas is the farmers market. Even in the South they are not readily available anymore, and even then, only in the heat of the summer.

 
My grocer sells fresh black-eyed peas in the freezer case...

with the other frozen veggies. They're frozen fresh in the summer and still have a green tinge to them. See if you can find those as I think they're superior, especially for black-eyed bean or corn bread salads, but also simmered for a side dish.
