Serves 6
1-1/2 pounds fresh broccoli, trimmed
1 tablespoon ginger powder
3 ounces fresh orange juice
3 ounces olive oil
1-1/2 ounces white wine vinegar
3 hard boiled eggs, chopped
Garnish - Toasted almonds, grated Swiss Cheese
Cook broccoli (do not overcook). Put ginger powder, orange juice, olive oil, and vinegar in a bowl. Stir slowly. Add chopped eggs.
When broccoli has cooled, place it in a salad bowl and pour the mixed dressing over it. Marinate for 8 hours in refrigerator. When ready to serve, garnish with almonds and sprinkle with grated swiss cheese. Serve Chilled...
