Because of no tourism the ocean has healed, the reefs are healing, there is more fish and the local fishermen are really hauling Ahi in. It is even a decent price. The other day I pulled out a favorite method (not recipe) and got lovely fresh cooked crab at Costco. I got Ahi steaks- about an inch thick- and cut a pocket in the middle. I turned the crab into a very pungent crab salad- mayo, capers, kalmata olives, garlic, onions, green onions- and stuffed the Ahi. I sautéed on the stove in olive oil. Absolutely delicious.
Today I found more Ahi steaks at a really good price. I don't have crab in the house so I will make a shrimp salad and stuff the Ahi. I love the Summer for fish and great produce here!
