I had some surgery done that keeps me out of work so I've been able to cook extra. I just want to say THANKS to all you generous cooks!

 
Thanks for pointing out this recipe Anna! I have a bunch of frozen bananas

that need to be used up. One question, what size pan did you use, 8x4 or 9x5? Reading the recipe it seems that an 8x4 should do it.

PS I also want to try the black and white banana bread that Meryl posted. It also looks really good and I have lots of bananas to use up.........

 
barbara, check out ina garten's banana crunch muffins if you need another use for your stash...

they are to die for. i got 12 muffins and a few mini-loaves out of the recipe. just do a search for "banana, muffins" and it'll come up.

ago when I watched that show cause I thought they sounded good. I'll use it the next time.

 
This is good. I made 2 loaf pans with 5 smashed large bananas and 2 whole. BUT...

if you aren't making muffins and you are using a bread pan, BE SURE to grease/flour it well. I buttered both pans and the entire bottom stuck on both loaves.

I was forced, FORCED I TELL YOU, to eat the loaves myself since it was so damaged looking.

Also, the chunks of banana developed a tiny purplish tinge around the edge. I can only assume it is some sort of chemical reaction.

 
marilyn, i admire your strength smileys/wink.gif ! a couple tweaks...angak suggested sprinkling the tops

with coarse sugar before baking - makes such a gorgeous glittery, crunchy top. i didn't use granola so they weren't as crunchy, but still delicious. and i used toasted pecans instead of the walnuts. i found the muffins only needed about 20 min and the mini-loaves needed 36 min.
