I made it a week or so ago, with an entire boneless pork loin. It was soooo tender, and not dry at all!

I usually use a pork shoulder roast, but that's so hard to debone and cut into pieces compared to the boneless pork loin.

We plan to make it for friends soon.

Oh, and another plug for the feta at Trader Joe's. It's "Pastures of Eden" brand...

...sheeps milk feta from Israel. Oy, is it good!

Also, my tsatziki has been better than ever, thanks to another TJ's product. It's called Mediterranean Yogurt Cheese, and it's in a 16 oz container next to the other yogurts. You can easily make it yourself, as it is simply a good quality, full-fat yogurt that has been allowed to drain over night in a coffee filter suspended over a bowl to catch the liquid.

I seed, chop and drain an english cucumber, then add that to the yogurt cheese along with 3 to 4 tablespoons of good quality, fruity olive oil, 2 cloves of crushed garlic, salt to taste, 2 to 3 tablespoons fresh minced dill, and the juice of one medium lemon. Stir well and allow to meld for an hour in the fridge.

Good stuff, and not too runny. Thicker consistency, and very creamy.

The chicken thighs were terrific with your souvlaki recipe on "BF Greek Friday"

I also made the Greek Salad ala Acropolis, tzatziki (Ina Garten) started with very thinly sliced watermelon, sliced Kalamata olives, a sprinkling of crumbled feta,plated. Homemade ice cream and cookies (Dorie Greenspan chocolate chunkers)
A cool meal for a really hot evening.

Glad it went well, Mo. I have been talking to my close friends in San Diego...

...as we plan to "escape" there next month. I have been telling them how much we enjoy the whole greek grill menu, and that they need to host a patio party when we get there. (We have that kind of relationship).

I'll do the cooking and bring 90% of the food.

We can't wait! We know they'll love it.

I do sometimes add a few tablespoons of sour cream to the tsatziki...

...and it is very good.

My wife eats that sauce on practically any savory dish. She loves the leftovers. I expect to see it on Cheerios soon.
